Strawberry Muffins

The  Florida Strawberry Growers Association Women’s Committee shares this recipe for delicious, Florida strawberry muffins with us today. It’s a wonderful breakfast side or snack that’s easy to make and wholesome to eat. You can even switch the all-purpose flour for whole wheat flour.

These muffins are even more fabulous when enjoyed with our Sweet Strawberry Butter. You absolutely must try it!

Did you know that the corn muffin is the official state muffin of Massachusetts or that the blueberry muffin is the official state muffin of Minnesota and the apple muffin is the official state muffin of New York? Let’s start a movement to make the strawberry muffin Florida’s official state muffin!

Florida Strawberry Muffins

Ingredients

  • 1 1/2 cups fresh Florida strawberries, chopped
  • 3/4 cup sugar
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1/4 cup butter, melted
  • 1 tsp. pure vanilla extract

Method

Combine the strawberries and 1/2 cup sugar in a small bowl. Set aside for one hour. Drain; reserve liquid and strawberries separately.

Preheat oven to 425°F.

Combine flour, baking soda, nutmeg and salt. Set aside. Mix the eggs, butter, vanilla, remaining 1/4 cup of sugar and liquid from strawberries in a medium bowl.

Add flour mixture and stir until combined. Fold in reserved strawberries. Spoon into 12 greased muffin pans. Bake for approximately twenty minutes or until golden brown.

Makes 12 muffins.

Serve warm dusted with powdered sugar or with Sweet Strawberry Butter.

Note: Pure vanilla extract may be acquired from several sources. Nielsen-Massey Vanillas, Kirkland Signature Pure Vanilla Extract, and Tone’s 100% Pure Vanilla Extract are some outlets.
